This wholesome banana loaf is the perfect way to use up any overripe bananas. It's super simple, tastes great and can even be popped in the freezer to enjoy at a later date.
Turn on oven at 180C or 160C fan
Line a loaf tin with baking parchment.
Beat the butter and sugar until light and creamy. Slowly add the 2 eggs and a little of the flour and beat until combined. Fold in the flour and baking powder. Add your mashed bananas and fold in.
Pour the mix into your lined loaf tin and lightly tap the bottom of the tin on your worktop a couple of times. Pop into the oven and bake for approx. 30min – your loaf should be golden and a skewer should come out clean.
To make the drizzle, mix the icing sugar with a couple of tsp of water. Drizzle the icing over your loaf and sprinkle with some crunchy granola to decorate.
