Our version of French Toast is super easy, and a satisfying way to use up that last slice of slightly stale bread. We've drizzled ours with a warm, home made sticky compote.
It's perfect for breakfast, brunch or supper - and the kids will love it too!
Whisk the eggs with the milk and spices (I used cinnamon & nutmeg) in a shallow bowl.
Cut your bread in half diagonally, dip it into the egg mix and coat thoroughly (if I have space in the bowl I pop it all in and leave to soak for a few minutes).
Heat butter or oil (I used coconut oil) in a large frying pan. Add your eggy bread to the pan and cook for 2 to 3 minutes over a medium heat until golden before turning over and cooking for another 2-3 minutes.
Pop your golden french toast onto a plate to keep warm whilst you make the topping.
In the same pan, add a handful of berries and a teaspoon on honey. Warm through on a medium heat until the natural fruit juices and honey combine to create a glossy compote.
Drizzle your compote over your french toast and serve. If you're feeling fancy and have any nuts or granola in the cupboard a sprinkling of this will do just nicely too!
