Gingerbread Granola Loaf

Ginger, spice and  all things nice - that's what our gingerbread granola loaf is made of.

Gently melt the golden syrup and butter in a pan stirring as it melts.  Once combined set to the side.

Cream the egg and the sugar with an electric whisk.  Gradually add the melted butter mix stirring continuously.  Sift in the flour, baking powder, ginger, mixed spice and combine.

Mix the bicarb of soda with the milk then add this gradually to the mix until smooth.  Add the granola breaking down any clusters between your fingers and stir through.

Pour the runny mixture into a lined loaf tin and bake on 170 fan for 35 minutes.

If you're adding a glaze then allow the gingerbread to cool fully before glazing.


  • 130g plain flour
  • 65g soft brown sugar
  • 50g butter
  • 50g granola
  • 1 egg
  • 175ml milk
  • 1 tbsp golden syrup
  • 2 tsp ginger
  • 1 tsp mixed spice
  • 1 tsp baking powder
  • 1 tsp bicarb of soda
